Russian shchi is a hearty and comforting soup that is a true staple in Russian cuisine. Made with shredded cabbage and root vegetables, shchi has been a favorite of many generations of Russians. It’s easy to make and perfect for cold winter nights.

There are different ways of making shchi, but today we’ll share the most traditional recipe for this Russian soup.

Ingredients:

• 1 large onion, chopped

• 2-3 garlic cloves, minced

• 2-3 medium carrots, chopped

• 3-4 medium potatoes, cubed

• 1 small head of cabbage, shredded

• 1-2 bay leaves

• 4-5 black peppercorns

• Salt to taste

• 1-2 tbsp. of vegetable oil

• 2 liters of water or vegetable broth

• Optional: sour cream and fresh dill as toppings

Instructions:

Heat up the oil in a large pot, then add the onions and garlic. Sauté for a few minutes until they turn golden.

Add the carrots and potatoes and cook for another 5-7 minutes, stirring occasionally.

Throw in the shredded cabbage and let it cook for about 10 minutes, stirring occasionally. It should start to soften and wilt.

Add the bay leaves, peppercorns, and salt to taste.

Pour in the water or vegetable broth, cover the pot, and let it all simmer for about an hour.

Check on the soup every 20 minutes or so and stir it to prevent anything from sticking to the bottom of the pot.

Taste the soup before serving and adjust the seasoning if necessary.

Serve hot with a dollop of sour cream and fresh dill on top.

Tips:

• You can replace some of the potatoes with turnips or parsnips for a more earthy flavor.

• Experiment with different herbs such as parsley or thyme to add more depth to the flavor.

• If you want a meatier version of the soup, you can add some diced bacon or beef to the mix. Brown it first before adding the vegetables to get that smoky flavor.

• Shchi tastes even better the next day as the flavors have had time to meld together. Just be sure to reheat it gently to avoid overcooking the cabbage.

In conclusion, Russian shchi is a comforting and nutritious soup that is easy to make. Whether you’re in the mood for something warm and filling or you want a taste of Russian cuisine, shchi is a great option. With this recipe in hand, you’ll be able to whip up a batch of this delicious soup in no time.
