Ingredients:
1 head of cabbage
2-3 medium-sized potatoes
2 medium-sized carrots
1 medium-sized onion

1 tablespoon of tomato paste
3-4 tablespoons of oil

Directions:
Begin by preparing all of the vegetables. Peel the potatoes and carrots, and chop them into small pieces. Finely chop the onion and garlic.
Heat the oil in a large pot. Add the onion and garlic, and fry until golden brown.
Add the carrots, and fry for a few minutes until they are slightly soft.
Add the potatoes, and fry for another few minutes.
Finely chop the cabbage and add it to the pot. Stir everything together, and let it cook for about 5-10 minutes.
Add enough water to the pot to cover all of the vegetables. Bring the soup to a boil.
Once the soup has come to a boil, add the tomato paste, salt, and pepper. Mix everything until the tomato paste has dissolved.
Lower the heat to a simmer, and let the soup cook for about 30-45 minutes until all of the vegetables are fully cooked.
Taste the soup and adjust the seasoning as necessary.
1 Serve the shchi hot with a dollop of sour cream if desired.
